Today was our first time teaching Sunday School. Well it was our first time teaching ever. We have the 12-15 year old boys and girls except there are no girls. We have 10 boys total in class. It was kinda fun. I hope we haven't already corrupted them. Lets hope we don't screw them up permanently.

My Perfect Pesto Sauce



I hope you like it as much as I do....

Pesto Sauce

3 cups fresh basil leaves
1 1/2 cups chopped walnuts
(optional) {I have used pine nuts and almonds in the past and it tasted way better than walnuts)
4 cloves garlic, peeled
1/4 cup grated Parmesan cheese
{I buy the shaker thing}
1 cup olive oil
salt and pepper to taste
{sea salt and cracked pepper is way better}

DIRECTIONS

1. In a food processor, blend together basil leaves, nuts, garlic, and cheese. Pour in oil slowly while still mixing. Stir in salt and pepper.

I Love This Show!



2 episodes in and I am HOOKED! I have always loved Tori Spelling. I really do think she is awesome. Judge me if you must but I think she rocks and I am addicted to her show.

OUCH!

So there I am laying in bed next to my wonderful and still asleep husband this morning. His alarm went off annoyingly on-time. Steven rolls towards me to attempt a snuggie. I am mid stretch and then all of a sudden....OUCH! I tweaked my neck pretty bad. ALL I DID WAS STRETCH. So now I am attached to a heating pad and I will probably OD on aspirin and Tylenol because I hurt so bad.

Do you have any home remedies I don't know about? HELP please.

Changing Yet Again

I change my blog background all the time (as you have probably already noticed). I love this purple. I bought pretty deep purple flowers for my back yard and fell in love with them, so when I saw this background I had to snag it.

I am attending my first preceptor clinical tomorrow from 6-12 and Saturday from 6-6. I am so excited. Should I bring her a thank you gift or should I do that at my last preceptor with her? Nurses are super slammed and taking on extra patients because of the RN shortage and the economy and then taking on a student is a huge responsibility. I feel like I should do something to show her I appreciate her help and willingness to take me on. Let me know if you have any good ideas. Brit and I were thinking breakfast or lunch one day after I get to know her and what she likes would be nice. I think I want to do something better than food.


I'll let you know how my first shift as an ALMOST RN goes. :)

Subtle Rudeness

Has anyone ever been rude to you in a subtle manner? Has anyone said something extremely rude to you in a fake happy tone which left you hurt and confused for hours after the fact?

I have been a victim of this cruelty and I refuse to take it anymore. So this is to all of you that feel the need to belittle for your benefit....YOU NO LONGER EFFECT ME!

Delete me from your phone, email, MSN, and life. I should have deleted you long ago. I don't know why it took me this long to get rid of you. Better late than never right. RIGHT! I feel great knowing my life no longer contains you.

iphone

I have been wanting an iphone since they came out and Steven said if I passed my LPN exam I could get an iphone. Well for mothers day/post LPN exam I got my iphone. He surprised me with it!! I love that wonderful husband of mine.

He is the best at surprises/gifts. He is so awesome. I heart him!

Black Bean Salsa and My Yummy Queso Dip

Thanks for voting. I hope you like these recipes as much as I do. :)

Black Bean Salsa

* 1/3 cup fresh lime juice
* 1/2 cup olive oil
* 1 clove garlic, minced (I buy the Costco jar so my hands don't stink)
* 1 teaspoon salt
* 1/8 teaspoon ground cayenne pepper
* 2 (15 ounce) cans black beans, rinsed and drained (you could use any bean you want but the black is my fave)
* 1 1/2 cups frozen corn kernels (I used canned)
* 1 avocado - peeled, pitted and diced
* 1 red bell pepper, chopped (red, yellow, orange or green...it doesn't matter)
* 2 tomatoes, chopped
* 6 green onions, thinly sliced (I love these onions but you can used your fave instead)
* 1/2 cup chopped fresh cilantro (optional)

# Place lime juice, olive oil, garlic, salt, and cayenne pepper in a small jar. Cover with lid, and shake until ingredients are well mixed.
# In a bowl, combine beans, corn, avocado, bell pepper, tomatoes, green onions, and cilantro. Shake lime dressing, and pour it over the salsa. Stir salsa to coat vegetables and beans with dressing, and serve.

##The dressing is good on taco salads too!


Queso Dip

*1 (8 ounce) package processed American cheese, cubed (I normally hate this stuff but other cheeses DO NOT work)
*1 (8 ounce) package mild Cheddar cheese, cubed (I use mild because of the yummy milky taste you get)
*1 (7 ounce) can mild, chunky salsa
*3/4 (15 ounce) can chili (I use meatless mostly, not sure why but I do)
*1 (8 ounce) container sour cream (I use fat free)
*1 teaspoon chili powder
*1 dash hot pepper sauce (ex: Tabasco...use whatever kind you have or leave it out)
**Jalapeno is optional but it adds a great kick (I like using this over the hot sauce)


DIRECTIONS

1. In a medium saucepan over low heat, melt the processed American cheese and Cheddar cheese.
2. When cheeses are melted and thoroughly blended, mix in salsa, chili, sour cream, chili powder and hot pepper sauce. Cook and stir 10 to 15 minutes before serving warm.

Catch-Up

Happy Warm Weather To All!!!

So as most of you know I started my last semester yesterday. Sheesh, I am exhausted already. I have already put in numerous homework hours and a 830-5 class hours. Everyday I have something due, something to read, somewhere to go, a husband to feed and a house to clean. My life is literally insane right now. I quit the 365 day challenge. I just justify taking away from homework or husband time to go take a few silly pictures. I will do it again someday but right now I have no time, sorry. Well I just got home and I have leftovers in the microwave screaming at me. You could say this is my breakfast because it is the first thing I will eat today. Sad isn't it...?


Enjoy the weather, go sit with some flowers and have an amazing day!!

Tuesday Tell All

I spent way too much money at Home Depot and Kmart yesterday on my fabulous plants. I got home and spent 3 hours organizing them into pots. I would have stayed out there longer but it was way dark and I had cut my finger open. I could have stayed out longer had it been light, my finger was so packed with dirt that it wasn't bleeding anymore...Yeah gross, but I'm hard core like that.

So today is Cinco De Mayo and to celebrate we are making steak/chicken fajitas, spicy rice, and super sour margaritas. YUM!

So what do I have going on today.....?
1- cut chicken into strips and marinate with tequila lime (steak is marinated already in Chipotle pepper)
2- Run to the post office
3- plant the bell pepper plant, jalapeno, and 3 tomatoes.
4- clean house: vaccume, mop, scrub, organize.
5- fill tiki torches
6- start din din
7- exchange 2 shirts I bought yesterday because they are way to low cut. I really should start trying stuff on first.

Why is showering not part of my to do list? Yikes, I better fit that in somehow.

I Took A Break

I had 2 finals from hell and I took my Nclex-PN exam all within 3 weeks of each other. It was so hard! So I took a break from my 365 day challenge. I think it was a valid reason for a break. Don't hate me!! I started back up today. I'll start posting again soon I promise. Ya'll have a good night.
